A masterpiece from Chardonnay vineyards in the Grand Cru of Avize and, to a lesser extent, Mesnil Sur Oger; purity, freshness, no added liqueur, and an extra brut dosage. Extended aging on lees and degorgement à la volée, nothing is mechanized in this historic family-run company: here, everything is art and grape. A solemn and pure expression of a mythical terroir: an ode to the great Blanc de Blancs. Citrus and banana quickly give way to a monumental and exceptionally long ode to the chalk of Avize, with echoes of Salon. It’s recommended to open it in advance, give it due consideration and time, serve at 12°C to avoid freezing; these are great wines, not industrial ice cream or granitas.
